Why Kölsch is the Ultimate Summer Beer: Crisp, Refreshing, and Perfect for the Season

Hey friends, it’s Franz fromFranzel here. With spring in full swing and summer right around the corner, the warmer weather has me (and the whole team) thinking about what beer we want to be serving as the days get longer and hotter. Heavy stouts and rich IPAs are taking a backseat. What we’re craving — and what we know our guests will love — is something light, bright, and endlessly drinkable. That’s exactly why Kölsch has become our go-to summer beer here at Franzel.


If you’re not already familiar with Kölsch, let me introduce you properly. This iconic beer hails from Cologne (Köln), Germany, and it’s one of the most strictly protected beer styles in the world. Since 1986, the Kölsch Konvention has decreed that only breweries within about 50 km of the city can call their beer “Kölsch.” It’s a protected geographical indication, kind of like Champagne or Parmigiano-Reggiano.


What makes it special? Kölsch is a hybrid in the best way possible. It’s top-fermented with ale yeast, but then cold-conditioned like a lager. The result is a brilliantly clear, pale gold beer with a light body, subtle fruity esters (think delicate pear or apple), a soft cracker-like malt character, and just enough noble hop bitterness to keep things interesting. At around 4.4–5.2% ABV, it’s sessionable without knocking you out. Clean, crisp, dry finish. No cloying sweetness, no hop bomb, just pure refreshment.


That profile is exactly why Kölsch shines in warmer weather. When it’s hot and humid, the last thing you want is a beer that feels heavy or lingers too long on the palate. Kölsch quenches your thirst like nothing else. It’s lively, balanced, and dangerously easy to drink — the perfect pour for long afternoons and warm evenings here at Franzel.


In Cologne, the serving ritual is part of the charm. Waiters (Köbes) circle the tables with a Kranz — a round tray loaded with 200ml Stanges — and keep topping you up until you signal you’re done by placing a coaster over your glass. It’s social, efficient, and keeps the beer ice-cold and fresh.
