Inspired by the rich culinary traditions of Alsace, this dish starts with a perfectly prepared pork schnitzel and builds into something truly special.
How We Prepare the Alsässer Schnitzel at Fränzel
We begin with high-quality pork cutlets, pounded thin for maximum tenderness, hand-breaded, and fried to a golden, crispy perfection — juicy on the inside, shatteringly crisp on the outside.
Then we layer on the signature Alsatian toppings that make this dish shine:
Fresh onions, sautéed until soft and sweetly caramelized
Our premium double-smoked bacon, cut into crispy lardons for deep, smoky richness
Nutty Gruyère cheese, sliced and broiled until bubbly and golden
