At Fränzel in Goshen, we love bringing a little piece of the old country to your table every week with our rotating Tagessuppe (Soup of the Day). This week we’re proud to feature one of the most beloved classics from the Baden region: Badische Hochzeitssuppe – the traditional Baden Wedding Soup.


Even if you’re not attending a wedding this weekend, one spoonful will make you feel like you’re at the head table. This is no ordinary soup. It’s an elegant, crystal-clear Consommé packed with six traditional “Einlagen” (garnishes) that together tell the story of Baden hospitality: delicate, hearty, silky, and satisfying all at once. It's a German celebration in a bowl.

Consommé

The soul of the soup. We simmer beef and vegetables for hours, then clarify the broth the old-fashioned way until it becomes a sparkling, amber-colored masterpiece. Light on the palate yet deeply flavorful – the perfect canvas for all the beautiful garnishes that follow.


Fladdelnudle (Flädle-Nudeln)

Thin, golden homemade crêpes sliced into delicate ribbons. Think of them as elegant little “pancake noodles.” They add a subtle chew and a whisper of eggy richness that melts in your mouth.


Greißnocklern

Light, airy semolina dumplings. Made with fine durum wheat semolina, butter, egg, and a touch of nutmeg, these little clouds practically float on the spoon. They’re the signature of many Baden soups and bring a gentle, comforting texture.


Semmel Knödel (Semmelknödel)

Eierstich

Fleisch Klossen (Fleischklößchen)
